Gluten-Free Turkey Chili

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 pound Simple Truth™ Natural 93% Lean Ground Turkey
  • 2 teaspoons salt, divided
  • 2 teaspoons ground pepper, divided
  • 1 can (14.5 oz.) Simple Truth Organic™ Diced Tomatoes
  • 1 can (15 oz.) Simple Truth Organic™ Dark Red Kidney Beans, drained
  • 1 can (15 oz.) Simple Truth Organic™ Dark Red Kidney Beans, drained
  • 1 can (15.25 oz.) sweet golden corn, drained
  • 1 bell pepper, diced
  • 1 cup vegetable stock
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 cinnamon stick

Directions

  • In large sauté pan over medium-high heat, add oil. Once shimmering, sauté garlic and onion 1 minute. Add turkey; season with 1 teaspoon salt and 1 teaspoon pepper. Cook 8 minutes, stirring often, until turkey is browned (safe internal temp. 165°F).
  • Transfer turkey to slow cooker. Add tomatoes, kidney beans, black beans, corn, bell pepper, vegetable stock, chili powder, cumin, cinnamon stick, remaining 1 teaspoon salt and 1 teaspoon pepper. Stir, combining well.
