Sometimes called turtle beans or Mexican beans, black beans are small, ebony gems that cook up soft and creamy, with ivory-colored flesh and a slightly sweet taste. A staple in both South and Central American and Caribbean cuisine, they’re also a favorite go-to protein source for vegetarians and vegans. One quarter-cup serving supplies 15 healthy grams—plus hefty amounts of fiber, iron and other vitamins and minerals.
To shorten cooking time and make them easier to digest, soak black beans before cooking. Rinse first, then place beans in a large bowl and cover with water. Let soak for eight hours, or overnight, in the refrigerator. Drain water and re-rinse the beans. To cook, combine one cup of beans and three cups of water in a large pot. Bring water to a boil, reduce heat, cover partially and simmer for an hour and a half.
