The Mt. Athos olive is picked when it’s young and then brined to attain a soft, buttery flavor and a meaty texture. Add to that the slight crunch and pleasantly subtle piquancy of a mild garlic clove, and you have yourself a morsel that goes just as well in cocktails as it does on an appetizer platter, where it works especially well with an herbed goat cheese.
