Find No. 75, this delicate egg pasta has been formed into a cheerful sunflower, or "girasoli," shape and stuffed with tender butternut squash and nutty Parmigiano Reggiano cheese. Lombardia Gourds play an important part in the cuisine of Lombardy and other regions of northern Italy, where conditions are particularly well-suited to their cultivation. This is where the tradition of sweet squash flesh encased within delicate pasta traces its origins. To make our pasta, we use butternut squash picked at the peak of freshness and combine it with a nutty dollop of Parmigiano Reggiano PDO cheese to create a delightfully rich and nutty filling.
