  • 1 tsp. minced garlic

  • 4 cups chicken broth

  • 2 cups cooked chicken, chopped or shredded

Directions:

  1. Preheat oven to 400°F. Butter 9”x13” casserole dish; set aside.
  2. In 4-quart saucepan over medium heat, melt butter. Add garlic and salt. Cook about 30 seconds, until fragrant. Stir in flour.
  3. Slowly whisk in chicken broth and milk, avoiding lumps. Add rice; bring to boil. Cover; reduce heat to low. Cook, stirring occasionally, about 20 minutes, until rice is just tender.
  4. Remove from heat. Stir in 1½ cups of cheese, pepper and onion blend, drained tomatoes and chicken. Transfer to prepared baking dish.
  5. Top with remaining ½ cup cheese. Bake 20 to 22 minutes, until heated through and bubbly. Let stand 5 minutes before serving.

  • 8 oz. medium shells pasta
  • 2 cups water
  • 1 can (10.5 oz.) condensed cream of chicken soup
  • 1 cup cheddar cheese, shredded

Directions:

  1. In Instant Pot, combine pasta and water. Close lid and change valve to sealing. Pressure cook on high 2 minutes. Allow to naturally release 5 minutes, then manually release any remaining pressure.

  2. In large pot of simmering water, poach chicken until no longer pink in center, about 15-20 minutes. Remove from pot and set aside.
  3. Bring poaching water to boil. Cook pasta in poaching water. Drain.
  4. Cut chicken into small pieces and mix with noodles.
  5. In separate bowl, mix together mushroom soup, chicken soup and sour cream. Season with salt and pepper.
  6. Gently stir soup mixture into chicken mixture. Transfer to 2-quart baking dish.
  7. In small saucepan, melt butter. Remove from heat. Stir in crumbled crackers. Top casserole with crackers.
  8. Cook bacon; let cool. Crumble on top of casserole.
  9. Bake casserole 30 minutes, until heated through and browned on top.

Directions:

  1. Using 6-quart pressure cooker, press “Sauté” setting. Add in olive oil, onion and bell pepper; sauté 4 minutes, stirring occasionally. Add in garlic and cubed chicken breast; sauté another 2 minutes. Make sure no chicken is stuck to the bottom of the pressure cooker.
  2. Spoon contents of cream of chicken soup into pressure cooker. Pour in chicken broth (or water). Stir to combine.
  3. Break dry/uncooked spaghetti in half; put into pressure cooker. Gently press spaghetti down so it’s mostly covered by liquid. Add a generous pinch of salt and pepper. Do not stir dry spaghetti, space will be tight.
  4. Seal pressure cooker lid and set the pressure cooker to “High Pressure” for 8 minutes. Flip the valve to release the pressure (quick release). When pressure subsides, open the lid and stir in 1 cup of cheese. Sprinkle remaining cup of cheese on top and let sit 2-3 minutes, until it has melted. Contents of the pressure cooker will thicken as it sits with the lid off, so if it seems like there’s a little too much liquid, let it sit with the lid off for a few additional minutes.
  5. Top with crumbled bacon and fresh parsley if desired.
